Smokey Chipolte Cornbread and Smoked Sausage Skillet Meal That is Also Diabetic Friendly
These recipes are for a meal that is quick, easy, and inexpensive. They are suitable for anyone, including diabetics. One skillet cooks the Smoked Sausage Skillet Dinner using smoked sausage, sauerkraut, apple, etc. For a really different cornbread, try this Smokey Chipolte Cornbread from Betty Crocker. This is a healthy alternative that has Fiber One cereal as an ingredient.
SMOKED SAUSAGE SKILLET MEAL
1 lb. Smoked Sausage
1 can sauerkraut, rinsed and drained
3 tbsp bacon drippings or canola oil
1 small onion, thinly sliced
1 medium apple, peeled and thinly sliced
1/4 tsp salt
1/2 tsp celery seed
1/2 tsp dill seed
1 tbsp SPLENDA
1/2 cup water
1/8 tsp black pepper
In a heavy medium-size pan, heat bacon drippings or oil and add onion to saute. Add the remaining ingredients except the sausage. Cover and cook slowly for 15 minutes until apple slices are soft. Cut sausage into wedges and add to pan. Continue cooking until sausage is heated through.
BETTY CROCKER’S SMOKY CHIPOTLE CORNBREAD
1 cup Fiber One original bran cereal
1 cup cornmeal
1 cup Gold Medal all-purpose flour
2 tsps baking powder
1 tsp baking soda
1 tsp salt
1/2 tsp chili powder
1 1/4 cups buttermilk
1/4 cup barbecue sauce
2 tbsps finely chopped canned chipotle chiles in adobo sauce (from a 7-oz can)
2 tbsps vegetable oil
1 egg
Heat oven to 400 degrees. Spray an 8-inch square pan with cooking spray.
In a large bowl, stir together cereal, cornmeal, flour, baking powder, baking soda, salt and chili powder; set aside. In a medium bowl, stir together remaining ingredients. Stir mixture into cereal mixture. Pour into the prepared pan.
Bake at 400 degrees for 25 to 28 minutes or until golden brown. Serve warm.
Yield: 9 servings. Per serving: 200 calories (40 from fat), 33 grams carbs, 5 grams protein
